Barley miso is one of the three main types of miso, alongside rice miso and soybean miso.Whilst rice miso is the most common type of miso nationwide, barley miso is primarily consumed throughout Kyushu, as well as in Yamaguchi and Ehime prefectures.It has a lower salt content and uses a larger amount of koji, giving it a strong aroma and sweetness. As well as being nutritionally balanced and highly nutritious, miso has many health benefits. Compared to rice miso, barley miso contains higher levels of dietary fibre and glutamic acid, which contributes to its umami flavour.
