Since dedicating himself to specialty coffee in 2019, Silvino and his wife, Rosa Guevara Jimenez, have worked as a team to elevate their crop of Caturra, Bourbon, and Gesha varieties. While Silvino manages the careful cultivation and harvesting, Rosa oversees the 10-day patio drying process and sustains their harvest workers with meals prepared from their farm's own bananas and cassava. To draw out the distinct character of his harvest, Silvino employs a precise washed double-fermentation method: cherries are first fermented whole for 24 hours, then pulped and fermented again in sealed plastic bags for another 36 hours. This meticulous approach not only produces an exceptional cup, but also helps to provide a quality education and a bright future for their daughter.
