100% Sauvignon Blanc This wine comes from 36+ year old densely-planted vines grown on marl slopes facing Southeast that are never treated with any chemicals. Hand-harvested (Lilian, Guy's son, is one of the last producers in Pouilly Fumé to still pick by hand), the wine is wild-yeast fermented in stainless and cement tanks. It stayed 4 months on its lees, then 1 year in cement tanks before being bottled unfined, unfiltered with a drop of SO2. It shows slightly rich lemony minerals, chalk, smoke, with a hint of red berries on a medium elegant frame, ending with a long finish. Sauvignon Blanc from Pouilly-Fumé, Loire Valley, France; medium bodied and dry with notes of lemon citrus, grass, almond liqueur, and stony minerals, with medium plus acidity, vegetal undertones, and a clean lifted finish. NOTE: the risqué label apparently came to life after complications registering the wine with the AOC. A mouthwatering white wine, unoaked and hand harvested by this family-run domaine that has been around since the 17th century. Guy Baudin was a peer of Didier Dagueneau, but chooses not to barrel age this wine, allowing for optimal freshness and immediate drinkability. With tangy green apple notes, this is an especially good match for scallops, classic goat cheese and poultry dishes. Tech Sheet
