Finca El Espejo is four hectares at 1,850 meters in Santa María, Huila. Reinel Borbon farmed lentils and grains on this land before he planted coffee, more than fifteen years ago. He is a second-generation grower with around thirteen thousand trees in production. Reinel ferments his coffee with a yeast culture he developed himself, refined over several harvests. Ripe cherries rest whole for twenty hours, then the depulped parchment goes into open barrels with the yeast for up to eighty hours. After washing, the coffee dries on raised beds for two to three weeks, depending on weather. His eldest son is learning the process from him.
