So imagine my satisfaction when I came across the Greuzard family who had been vignerons in Burgundy for many generations and had relatively recently moved to Domaine de l’Herbe Sainte (45 minutes east from Carcassonne) with a view to growing top flight Chardonnay and Pinot Noir in the Pays d’Oc. It really was the best of both worlds: Chardonnay and Pinot Noir made by a family from Burgundy but at highly reasonable prices. This is their flagship white wine. Tasting Note Matured for 8 months in French oak barrels, with regular lees stirring to build richness and mouthfeel. A proportion of new oak contributes subtle spice and toasted nuances while maintaining the wine’s freshness and balance. Tasting Note Domaine de l’Herbe Sainte “Harmonie” Chardonnay 2024 is a pure and powerful expression of Chardonnay from the sun-drenched vineyards of the Pays d’Oc. Brilliant golden-yellow in colour, it opens with an enticing bouquet of ripe peach, yellow apple and citrus peel, layered with notes of vanilla, toasted hazelnut and delicate baking spices derived from barrel fermentation and ageing. The palate is generous and beautifully structured, combining impressive concentration with remarkable freshness. Rich stone fruit flavours mingle with hints of buttered brioche, roasted almonds and subtle oak spice, creating a luxurious yet finely balanced profile. A creamy texture envelops the palate, while vibrant acidity provides energy and precision through to a long, persistent finish. This versatile Chardonnay pairs superbly with roast chicken, creamy pasta dishes, grilled lobster, pan-seared scallops and mature hard cheeses.
