The Derwent rises at Lake St Clair — the deepest freshwater lake in Australia, sitting under the dolerite skyline of Tasmania's central highlands. A 50/50 bevel ground to a 17° cutting edge: symmetrical, ambidextrous, and ground thin enough to glide through a ripe tomato without crushing it.
