Delmonico
A steak that can vary by butchers. Ours is cut from the rib in the center of the steer. That area doesn’t do a whole lot of exercising, making for a tender, well marbled steak. Cook it high and fast then give it a little rest, add a little butter melted on on top and enjoy!
