Led by Edinson Argote and Ángela Rojas, the farm was built around a simple idea: combine exceptional varieties with some of the most advanced processing techniques in Colombian coffee. Before starting Quebraditas, Edinson spent years working in quality control and processing, refining his understanding of fermentation and sensory development. Today, that knowledge is applied across an impressive collection of rare varieties including Sidra, Gesha, Sudan Rume, Wush Wush, Papayo, and Eugenioides. The farm itself sits high in the mountains of Oporapa, where volcanic soils, strategic shade management, and careful agronomy create the foundation for remarkable coffees. This Sidra lot showcases the style that has made Quebraditas so sought after. Through a controlled yeast inoculated anaerobic fermentation, Edinson guides the development of flavor with extraordinary precision, creating a cup that feels both vibrant and elegant. The natural process amplifies the varietal's expressive character, revealing juicy strawberry sweetness, bright maracuyá, and the delicate floral complexity of magnolia. The result is a coffee that balances intensity with clarity, showcasing both the unique Sidra variety and the innovative spirit behind Quebraditas. This coffee peaks between 15 and 20 days. For the best experience, we recommend freezing it within this window if you want to enjoy it over a longer period.
