Brick & Mortar Brut Nature

2022 vintage. Founded by Matt and Alexis Iaconis, Brick & Mortar focuses on high-elevation, cool-climate sites across California's North Coast. This bottle is a traditional méthode champenoise blend of Chardonnay and Pinot Noir that spends over three years resting on its lees (the spent yeast cells that give great bubbly its magical texture). Because it is a Brut Nature, there is zero sugar added before final corking. What you get is pure, high-altitude electricity: bright green apple, snappy citrus zest, a faint whisper of fresh herbs, and a structural chalkiness that keeps your palate begging for another sip.
