If you would like a Western-style handle, please contact us before placing your order. The history behind the name "Gyuto" is very interesting. Indeed, about 100 years ago, Japanese people did not consume much meat. They were the ones who named the Western chef's knife "牛刀," which means "beef knife." The word back then encompassed the shape, the structure and the manufacturing method. Now, a knife with this profile is called "Gyuto" by non-Japanese too. The edge line is curved and suitable for slicing.
