Cherries are hand-picked at peak ripeness and delivered to the station the same day for sorting, depulping, and a traditional washed fermentation in clean water. After fermentation, the parchment is laid out on raised beds and turned by hand throughout the drying window, which protects the cup's clarity and gives the coffee its rounded, gentle character.
