Cultivating plots of no more than two hectares at around 2,000 meters above sea level, these growers follow traditional farming methods that respect both the land and the surrounding ecosystem. Coffee cherries are carefully delivered by donkey or horse from the nearby villages of Refisa, Roricho, Bulga, and Solina to the Refisa washing station, operated by our partner SNAP since 2019. Beyond coffee processing, the station plays an important role in the local community by improving access to roads, healthcare, and education. Only ripe red cherries are selected for processing. After harvesting, the coffee undergoes a shaded fermentation for 45–60 hours before being fully washed to remove the mucilage. It is then dried on raised African beds in thin layers for 7–10 days. With 200 drying beds, the station ensures every lot receives the space and careful attention needed for an even, consistent drying process. The result is a beautifully clean and expressive washed Sidama coffee that reflects the region's high elevations, dedicated producers, and meticulous processing.
