Summer Blue Oysters

Summer Blues hail from our farm in Port Townsend Bay, on the northern end of the Olympic Peninsula. Savvy readers will note the repetition of the word "blue"... like our better known Blue Pools, these oysters are tumbled for a deep cup and smooth, rounded shell. Their growing location close to the Strait of Juan de Fuca gives them a more oceanic flavor than we typically see in our Hood Canal or Puget Sound oysters. See pictures of our farm here.
