Cacahuazintle is the corn pozole is built on — unusually large, round, cream-colored kernels that cook tender and open rather than breaking apart. The tip cap on each kernel is cut away before it reaches you. That small step is what lets the corn bloom in the pot, and it's the difference between pozole and corn soup.
