Chef's Side Dishes

In May 2025, I worked with Ben from DAAKU, a local 'Award Winning' Indian Restaurant, to produce a set of side dishes to compliment my Cornish Tinned Fish, for my birthday soiree. And for the past few years, I have been trading at a local food market, and I must admit, become quite addicted to Paul's Cornish Kimchi, so, this year I have collaborated with both great local chef's, and launched two new 'ambient storage, long shelf life' 'Chef's Side Dishes' 1) DAAKU FOODS 'Bombay Aloo Cornish Potatoes' - A spicy sauce with Cornish 'Jazzy' Potatoes, sourced direct from the farmer F Pryor & Sons 2) CULTURA LIVE FOODS 'Cornish Kimchi Jjim' - A 'tangy' cabbage and vegetable fermented dish, inspired by Korean recipes, which is usually served served live, but our 'ambient storage, long shelf life' side dishes are steam cooked in the tin, which is when it becomes 'Jjim' Coming soon... I have also carried out some product development, so when we get back in to the Cornish Sardine fishing season in the summer, these two flavours will be combined with the little silver darlings (as seen in picture showing Sardines & Kimchi), and I can tell you, both chef's were very excited when tasting the trial products...
