Tasting notes A medium-bodied rosé with layered complexity and a long finish. Aromas of rose petals, cherry compote, strawberry, and fresh red berries unfold alongside earthy notes and a forest-like character reminiscent of tree bark, typical of Pinot Noir. The palate is rounded and expressive, offering both fruit richness and depth, with a lingering and harmonious finish. Food pairing Fresh figs with prosciutto, tempura of wild vegetables, boiled hairy crab, pork shabu-shabu with plum and shiso, strawberry and arugula salad, gazpacho, grilled salmon with miso (chan-chanyaki), fried chicken, jerk chicken (Jamaican-style spiced chicken), smoked salmon and cream cheese sandwich, pressed mackerel sushi. Winemaking COCO TOARU Series 2023 Pinot Rosé is made from grapes grown in Yoichi, Hokkaido. This wine was produced at 10R Winery in Iwamizawa, Hokkaido, by Bruce Gutlove, director of COCO FARM & WINERY and winemaker at 10R Winery. Pinot Noir underwent six weeks of carbonic maceration in small tanks before pressing. The juice was then transferred into a combination of vessels — French oak barrels (25%), concrete tanks (25%), and stainless steel tanks (50%) — and fermented with indigenous yeasts. A small amount of Chardonnay was added to the portion in concrete tanks to bring freshness and acidity to the blend. After fermentation, the wine was aged on lees for 10 months, during which spontaneous malolactic fermentation occurred. The wine was then racked, a small amount of sulphites was added, and it was bottled unfiltered. The 2023 growing season in Hokkaido was characterized by warm and humid conditions, which were carefully managed through attentive vineyard work and flexible winemaking, resulting in a wine that combines freshness and complexity with an expressive character. The wine is defined by a distinctly Hokkaido character, with cool-climate freshness and vibrant acidity. As Japan stretches long from north to south, each region produces wines with entirely different expressions — one of the most fascinating aspects of Japanese wine.
