Fresh culantro (ผักชีฝรั่ง), known as phak chi farang or sawtooth coriander, has long serrated leaves and a bold herbal flavour similar to coriander. Its stronger aroma allows it to retain its character in spicy salads, broths and richly seasoned dishes. How to use: Rinse the leaves, trim the firm ends and slice finely. Add culantro to larb, tom yum, spicy salads, noodle soups and Northern Thai curries. It is best added near the end of cooking or scattered over the finished dish to preserve its fresh fragrance.
