Dormilona Magic Carpet Pet Nat 2025

This pet nat is 100% chenin blanc sourced from a sandy-clay site in the Swan Valley. It was hand-harvested and whole bunch pressed into tank where it fermented with natural yeasts. The wine was chilled down to stop ferment once the desire sugar was achieved before bottling by hand. The wine completed its second ferment in bottle. The vintage was pleasant. The start of summer was long and cool leading to even ripeness and little disease pressure.
