Vintage: 2013 Grapes: 100% Chardonnay, exclusively from vines planted in 1960 at the base of a south-facing hill in the commune of Avize Denomination: Champagne AOC Vinification and aging: in barrels, where malolactic fermentation is fully carried out, it then remains on the lees for 8 years before disgorgement Dosage: 2 gr/L Alcohol content: 12% Serving temperature: 6/8 °C Pairings: A wine with a decidedly important, outstanding structure, which therefore requires equally elaborate pairings.
