15cenchi x Single O: Special Collaboration: Firecracker Coffee Basque Cheesecake

Born from a shared love of Japanese culture, craftsmanship and bringing people together, this collaboration between 15cenchi and Single O reimagines the flavours of Single O’s seasonal Firecracker coffee as a dessert. Inspired by the nostalgia of Japanese summer festivals, Firecracker celebrates bright citrus notes of mandarin and tangerine. We wanted to capture that same freshness in our signature gluten-free Basque cheesecake, carefully brewing the coffee before infusing it into the butter to create a gentle coffee flavour that complements, rather than overpowers, the citrus. Each cake is finished with handcrafted candied orange slices, made one piece at a time by our team. Founded in Sydney, Single O is one of Australia’s most respected specialty coffee roasters, with a long-standing presence in Japan. It’s been a privilege to work alongside their team and create a dessert inspired by their seasonal Firecracker coffee.
