Harvesting by Brix and using the refractometer helps to keep the harvest at a uniform ripeness, which is key when producing high quality naturals and honeys. For Alma Negra, only fully ripe, high-Brix cherries are selected and dried naturally on raised beds for at least a week before moving to the greenhouse patio. There, the cherries are spread in a thin layer during the day and gathered into mounds at night, a rhythm repeated until the coffee reaches its ideal level of dryness.
