If dark chocolate usually feels like too much, start here. 78% Nicaraguan cacao with a light scatter of flaked sea salt. The salt wakes it up. Opayo 78%. One of Nicaragua's most awarded cacaos, a single-variety bar. It carries the darkest taste of the two: fruity and floral, with molasses and raisin. Both are fermented and stone-ground in Nicaragua, then tempered and finished in our Wicker Park shop. Same cacao percentage, two completely different flavors. Two 60g bars. The best way to meet our chocolate. Store below 70°F.
