Du Vin à l'Âme - Ensemble C’est Tout Blanc

Ensemble C’est Tout Blanc is a wonderfully vibrant and textured Chardonnay that showcases the freshness and energy of Beaujolais Pierres Dorées through a distinctly low-intervention lens. Produced from young organically and biodynamically farmed vines planted across clay, limestone and marl soils, the wine carries both bright precision and an inviting softness. As with all the wines at Du Vin à l'Âme, the approach in the cellar is intentionally gentle and hands-off. Fermentation takes place naturally with indigenous yeasts, the wine is bottled unfined and unfiltered, and only a small amount of sulphur is used to preserve the purity and expression of the fruit. There is an effortless balance to this wine. Ripe orchard fruits and citrus notes sit alongside delicate floral touches and a subtle chalky minerality that gives freshness and lift through the finish. With a little air, the texture broadens beautifully, revealing a rounded, almost creamy depth while still maintaining impressive tension and drinkability. This is modern Beaujolais Chardonnay at its most honest... expressive, alive and crafted with real sensitivity to both vineyard and vintage.
