Fresh peeled water chestnuts (แห้ว), known as haeo, have a crisp, juicy texture and delicately sweet, nutty flavour. Already peeled for convenience, they retain their characteristic crunch when incorporated into both sweet and savoury dishes. How to use: Rinse before preparing, then slice into stir-fries, chop for dumpling and spring-roll fillings or dice for soups. Water chestnuts are also the traditional base for tub tim grob, where the cubes are coated, cooked and served with sweetened coconut milk and crushed ice.
