A distinctive unfortified Fino from Jerez, combining the freshness of biological ageing with the savoury depth of old vine Palomino. Made from 45 year old, low yielding Palomino Fino grown on Barajuela Albariza soils, this wine is a direct expression of its site. Hand harvested fruit undergoes a short period of asoleo before spontaneous fermentation in old botas, with only the finest fraction of the must selected for the final wine. Aged under a restrained layer of flor for two years, it develops remarkable depth without losing its sense of place. Fresh citrus, pomelo and ripe walnut meet iodine, oceanic salinity and chalky mineral notes, with a rounded texture and subtle bitter edge to finish. At 15.5% natural alcohol, it is a complex, savoury alternative to traditional fortified Fino.
