For more than 40 years, two generations of farmers have cared for this maesil orchard without relying on chemical pesticides, chemical fertilizers, or herbicides. Instead, they enrich the soil with beneficial microorganisms and nourish the trees using companion planting and naturally derived agricultural ingredients. The freshly harvested maesil do not travel far. They are processed at the farm’s own facility, then left to slowly ferment and mature for three full years.
