Coffee Info We Taste: Black Tea, Peach, Lychee Process: Washed MASL: 1200 Producer: Ajoy and Pranoy Thipaiah More about the process: A typical Kerehaklu lot is processed with great care and attention to detail. Freshly harvested cherries are floated the same day they’re picked, then placed in open-air fermentation tanks from around 6:00 p.m. to 9:00 a.m. the following morning. After this overnight fermentation in cherry, the coffee is pulped and transferred to lidded plastic barrels filled with fresh water and a measured amount of starter culture. During fermentation, the coffee is stirred every few hours to introduce oxygen and maintain an even, consistent process. After about 35 hours, the coffee is mechanically washed and moved to drying. Drying starts under heavy shade for the first two days before the coffee is transferred to a polyhouse to finish drying in a more controlled environment. What makes this particular lot stand out is the use of a unique starter culture—frozen by Pranoy during the 2023–2024 harvest. Each season, there's a moment when he senses the culture has reached its peak, guided by its aroma and microbial activity. At that point, he preserves a portion to carry its character into the next harvest. While we can’t say for certain how this preserved starter impacted the final cup compared to a fresh one, we can say this: we truly loved this lot and are so excited to share it with you!
