Bresolin's Vino Frizzante Col Fondo comes from the hills of Asolo, in the heart of the Veneto, in north-eastern Italy. The estate's vineyards lie in the rolling landscapes of the Colli Asolani, the historic terroir of Glera. This area enjoys a temperate climate, with Alpine and Mediterranean influences that favour gradual ripening of the grapes and preserve their natural freshness. This traditional expression of the Venetian terroir showcases an authentic, living, low-intervention style. Made from organically grown Glera , this wine is produced using the traditional "col fondo" method. After the base wine is made, it is bottled with its own yeasts, and the residual sugar allows a second fermentation directly in the bottle. The yeasts then remain at the bottom of the bottle, unfiltered, giving the wine its cloudy character and its lees-driven profile. The estate lets it evolve for several months in bottle, allowing the aromas to gradually gain complexity and depth. This wine reveals notes of apple, apricot, citrus, white flowers and ripe fruit, accompanied by hints of yeast, almond and wet stone. On the palate, the bubbles are creamy and delicate, wrapping a fresh, round, balanced juice. A lovely tangy tension supports the fruit, while a mineral backbone adds depth. The persistent, slightly saline finish extends the fruity and fermentative sensations with great freshness.
