Pompona XXL vanilla beans from Madagascar (Vanilla pompona), 20 to 25 cm long, around 7 g each. The rare among the rare: a species distinct from Bourbon, with massive, fleshy beans and a floral, chocolate palette. Offered here by the kilo, for houses looking for a signature nobody else serves. Origin & terroir Our family grows and prepares these beans in Madagascar, on shaded, humid plots, at the direct grower price, with no middleman. Pompona yields little there, and that is exactly what makes it rare. Selected one by one for suppleness, sheen and aromatic richness. Not to be confused with Tahitian vanilla The trade often calls any very thick bean a Tahitian vanilla. That is a shortcut: Tahitian vanilla is Vanilla tahitensis, grown in French Polynesia; ours is Vanilla pompona, from Madagascar. Both share the wide bean and the floral profile, hence the confusion. We keep the exact species name. Tasting & uses A deep, intense aroma, with floral and chocolate notes, more floral and less strictly vanilla-led than Bourbon. Targeted uses: signature pastry, restaurant desserts, ice creams, cocktails and infusions, infused rum, and any chef’s creation where the bean is seen as much as it is tasted.
