About the Wine Born from the sun-scorched, stony soils at the foot of the legendary Sainte-Victoire mountain, this red is everything Provence does best — and then some. A blend of Syrah and Grenache from 40-year-old vines, it's harvested by hand, aged for a full year in oak barrels and small sandstone tanks, and built to reward patience. Deep, velvety, and unapologetically bold. This is a wine with something to say. Tasting Notes Pour yourself a glass and watch the colour: a deep, inky purple with violet edges that means business. On the nose, think candied cherries, dark chocolate, and a whisper of tobacco, lifted by warming spice and roasted undertones. The palate is generous and plush: ripe dark fruit, silky tannins, and a long, spice-kissed finish that lingers like a Provençal sunset. Powerful, yes! But graceful about it... Food Pairing Suggestions This is a wine that likes its food as bold as it is. Go for a beautifully charred rib-eye, a slow-braised rack of lamb fragrant with herbes de Provence, or a rich mushroom and thyme gratin if you're keeping it veggie. Aged raw-milk cheeses are a natural companion too. In short: if it's hearty, it's happy. Noémie Guez didn't inherit the vineyard — she chose it. Born and raised in the shadow of the Sainte-Victoire, she returned to take over Domaine Saint-Pancrace in 2016, building the winery from the ground up with her own vision and, frankly, remarkable determination. The first vintage followed in 2019. Today she tends 20 hectares of certified organic vines on soils that have been farmed since antiquity — limestone rubble, red clay, blue sandstone — with a 11th-century chapel watching over the whole thing (built on the ruins of a Roman villa, because Provence doesn't do things by halves). Her approach is as grounded as the terroir: horses work between the rows, spontaneous grasses are encouraged, sheep arrive in autumn, and every decision is made parcel by parcel, vintage by vintage — no shortcuts, no shortcuts. The result is wine that's honest, precise, and unmistakably tied to this one extraordinary place.
