A bone-in, skin-on pork belly from The Duke of Berkshire, a rare English heritage breed brought back from the edge of extinction. By 1976 only a single Berkshire boar remained; a Dutch vet and the Belgian family business Danis crossed that boar with two old English landrace sows to revive the line, which is now raised on a small number of farms in Belgium. Queen Victoria had the breed bred at Windsor in the eighteenth century and chose it for royal banquets. The meat is deep marbled pink with finer muscle fibres than commercial pork, exceptional moisture retention, and a distinctly sweet flavour, closer in eating quality to good beef than to standard pork. The pigs are raised on straw in open runs, fed a vegetarian diet of cereals and apples, and reared without antibiotics. This 1.5kg cut is a single piece, ideal as a centrepiece Sunday roast for four to six, or for breaking down into smaller joints, belly slices, lardons, or home-cured bacon. The ratio of fat to meat is the point: it bastes itself as it cooks and rewards a hot blast at the end with skin that shatters under the knife. We strive for precision with every hand-cut order.
