Fante Kenkey is a traditional Ghanaian dish made from fermented maize dough, originating from the Fante people of Ghana’s Central and Western Regions. It has a slightly sour, tangy flavor and a smooth, firm texture. The preparation involves fermenting milled maize for several days, partially cooking a portion of the dough, mixing it back with the raw dough, shaping it into balls, wrapping them in plantain or banana leaves, and then boiling for several hours. Unlike Ga Kenkey, which is wrapped in corn husks, Fante Kenkey’s leaf wrapping imparts a distinct aroma and flavor. It is typically served with fried or grilled fish, pepper sauce, shito (black pepper sauce), stews, or soups, and can also be mashed with sugar, milk, and groundnuts for a sweet treat. Beyond its taste, Fante Kenkey holds cultural significance—often sent abroad as a gift, symbolizing connection and care between families.
