Cocktail inspired beers are an exercise in organised chaos. Orange and Tahitian lime provide bright citrus aromatics, while almond, molasses and bitters converge to recreate the unmistakable profile of a classic Mai Tai. A restrained sourness preserves the citrus without overwhelming the more delicate bittersweet interplay, allowing the cocktail to remain immediately recognisable. Fortunately, the tiny umbrella contributes very little to flavour.
