**NEW** COLOMBIA Risaralda
This coffee comes to us from the Risaralda region of Colombia. Risaralda lies deep in the heart of the Andes, due south of Medellin. The combination of elevation, volcanic soil, and ideal climate make Risaralda the perfect place to grow standout coffees. This lot, like the Excelso and the Brazil Serra Negra before it, is a regional blend. Smallholder farmers in the Marsella locale bring their cherries to be processed together with others from the region. This blend combines three common varietals - Castillo, Caturra, and Colombia. As with the prior Roaster’s Choice release, this coffee is extremely flexible in terms of brewing modality. Whether your ideal cup is espresso, filter, or otherwise, this coffee is friendly and approachable. As a filter brew, grind size and extraction time make a world of difference in the finished cup’s presentation. A longer extraction results in a sweet and mellow, slightly earthy cup with a hint of dandelion root. A coarser grind and shorter extraction opens up the stratification of flavor and notes of douglas fir tip and brown sugar separate themselves for an interesting blend of flavor.
