This Demeter-certified biodynamic rosé is Pinot Noir from wind-cooled Van Duzer Corridor sites, harvested early for lift and pale pink color. Fermentation starts spontaneously and finishes in bottle as a traditional pét-nat. The wine is released unfined and unfiltered under crown cap for a fun casual feel for these expertly crafted bubbles. It is brisk and bone-dry, with strawberry and pink grapefruit, a hint of rhubarb, and a lightly saline finish. Note: Pétillant Naturel (or "Pét-Nat") is a method of producing sparkling wine, also referred to as “Methode Ancestrale”, where the carbonation occurs from bottling the wine during the primary, alcoholic fermentation – in order to capture the carbon dioxide that is being naturally released.
