Bacchus 2025
Tasting Notes: Bacchus is often a variety compared to Sauvignon blanc and in England can often be highly aromatic. Each year we allow the vintage variations to shine by fermenting cool in stainless steel. This Bacchus is a more exuberant style, with aromas of gooseberry, grapefruit and elderflower. The palate is dry and crisp with tangy citrus flavours, and a fruit filled finish with a touch of spice. Winemaker's Notes: An aromatic and elegant reflection of the 2025 vintage, this Bacchus is a more vibrant expression of the normal notes with wonderful balance. The grapes were picked by hand in October 2025, then destemmed and pressed following a short time cold soaking. The must was then cool fermented using only natural yeast in stainless steel. The fermentation lasted over 6 months after which time the wine was left on the lees for a short period before being bottled in early Summer of 2026. Wine: Still White Grape Variety: Bacchus Body: Light Sweetness: Dry Alcohol: 11.5% Style: Crisp and aromatic with gooseberry and grapefruit on the nose, leading to bright tangy citrus flavours. Serve: Chilled between 8°C and 10°C. Food Pairing: Perfect served with soft cheeses and salads.
