Laudeto is grown at 1,800 meters above sea level in Pinchote, Santander — one of the highest-altitude coffee zones in Colombia's eastern mountain range. The farm has been in the same family for three generations. The current farmer didn't just inherit the land. He inherited the obsession for getting it right. His choice: anaerobic fermentation. Instead of exposing the harvested cherries to open air, they are sealed in oxygen-free tanks where the natural yeasts of the fruit work slowly and without interference. No shortcuts. The result is a depth of flavor and a brightness of aroma that conventional washed processing cannot produce — caramel that lingers, a grapefruit note that wakes up the palate, and a hazelnut finish that asks you to take one more sip. The Castillo variety, usually known for its clean and balanced profile, becomes something more complex in Laudeto's hands.
