Hand-harvested and fermented with indigenous yeasts, the wine undergoes 100% malolactic fermentation, followed by 18 months of aging—50% in stainless steel and 50% in large oak barrels. Mild, slightest hint of slinky marijuana as it evolves. Overwhelmingly tangy with juicy lemon on palate, definitely needed time to open up.
