Burgundy / France - This is the Hautes Côtes de Beaune Blanc 'Les Monts De Fussey' from a small south-east facing parcel of Chardonnay vines at 400m altitude, just above the village of Echevronne that borders the Hautes Côtes de Nuits. Good concentration, balanced with a rich, textured palate. Crushed, long 6-hour press cycle, ambient yeast fermentation with pied de cuve, aged 12 months in 228L and/or 600L barrels, no fining, occasional light filtration, minimal SO2 addition only if necessary during aging and before bottling.
