Zhangping Shui Xian Oolong Tea It is fair to say that some teas are made to be noticed immediately. We think that you will really like this one! Zhangping Shui Xian is different. It’s a tea that unfolds slowly, in the aroma, in the cup, and in the quiet moments while you drink it. We are so pleased to have this wonderful Oolong in stock here in the UK. Unlike most loose-leaf oolongs, this tea comes lightly pressed into small square cakes, a traditional style from Zhangping in Fujian Province, China. Each tea is packed separately to ensure freshness and contains just the right amount for a session; the average tea is 10g, just enough for a good tea session with friends. Inside those small parcels is a beautifully balanced oolong: floral, smooth, and gently creamy, with a lingering sweetness that stays with you long after the last sip. It is worth pointing out, as it can be confusing, that this Zhangping Shui Xian Oolong is not the same as the "Shui Xian Rock Tea" from Wuyishan. Whilst both are made in the same province, the two are different, with the Rock Tea being loose-leaf and not compressed like this one. What Makes Zhangping Shuixian Special Zhangping Shui Xian is one of the only square-pressed oolong teas in China. The leaves are lightly oxidised, shaped into small blocks, then slowly roasted to dry the tea and develop depth while keeping the tea’s natural floral character. When brewed, the leaves gradually loosen and open, releasing layers of flavour over several infusions. Expect notes of: Orchid and soft florals Creamy texture Honeyed sweetness A gentle roasted warmth Zhangping Shui Xian is an oolong that feels refined, but also incredibly comforting to drink. Origin This traditional Oolong tea comes from Zhangping County in Fujian, a region with a long tradition of crafting Shui Xian, where traditional wooden boxes are still used to press the tea into its distinctive shape. Interestingly, there are a number of translations for Shui Xian, such as ‘narcissus’, 'water immortal', ‘water sprite’ or ‘water lily’ in English. The area's cool mountain air, misty conditions, and mineral-rich soil help create teas with aromatic complexity and natural sweetness. The square pressing technique developed locally as a way to protect the leaves and make the tea easier to transport, and it’s now one of the region’s defining styles. How to Brew One of the joys of Zhangping Shui Xian is watching the compressed leaves slowly unfurl. A longer first steep is advised to help the tea fully open up. Gongfu style 1 square cake 100–120ml water 95°C Quick rinse (optional but advised) Steep until the tea has opened up. 10–20 seconds after, increasing gradually Re-infuse 6–8 times or more Simple brewing 1 square cake 250–300ml water 95°C Brew 2–3 minutes Why We Love It This is the kind of Oolong tea that works beautifully when you want something calming but still interesting and good-looking! The flavour of this Oolong evolves with each infusion, starting floral and creamy before moving into deeper, warmer notes. It’s also a tea that encourages you to slow down a little, unwrapping the square, watching the leaves open, and letting your tea session unfold naturally.
