Honduras Javier Fernandez Washed

Region : Las Flores, Santa Barbara Process : Washed Variety : Catuai Elevation : 1660-1700 masl Notes : Citrus, Cream, Almond Our history with Javier began in 2024 when we purchased a small amount of his coffee on a wimb, and it far exceeded our expectations. Fast forward to spring 2025, and we had the opportunity to visit Honduras and meet Javier in person. The long and bumpy trip up to Finca Don Andres, the family farm named after their father, was worth it for the beautiful view and incredible hospitality provided by the Fernandez family. We had the opportunity this year to purchase all of two lots from Javier's farm Los Tanques, this one in particular being a washed Catuai variety. A juicy citrus acidity and creamy body made this an obvious choice for our menu, and we are so excited to share it with you.
