A delight of fruity sweetness and nuttiness with a classic grippy dry texture. Made in La Mancha spain, from sheep milk. Aged for 5-6 months, this cheese retains some elasticity but is a firm cheese. Pair with: A sweet quince paste or pear butter or a marmalade for a delightful combination. Wine / Beer match: Try with a Tempranillo (Rioja) fruity sweetness and medium tannin.
