Italo Cescon Manzoni Bianco is a Veneto I.G.T. white wine made from 100% Incrocio Manzoni 6.0.13 grapes grown in the area of Basalghelle, San Polo di Piave, in the province of Treviso, on a medium-textured soil of sedimentary-alluvial origin. The vineyards, trained using Guyot and Sylvoz systems, have a density of 4,500-7,500 vines per hectare and a yield of 70 q/ha. The harvest takes place manually in the first ten days of September, selecting the best bunches. Vinification involves a cryomaceration of 10-12 hours, followed by soft pressing with a maximum yield of 60% free-run must. Fermentation takes place at a controlled temperature between 14 and 16°C for 18 days. Aging continues for 5-6 months sur lie, depending on the vintage, and for an additional 120 days in bottle after filtration. The color is straw yellow with evident greenish reflections. On the nose, it presents fine, intense, fresh, and mineral aromas, with hints of citrus, peach, and apricot, evolving into pineapple, apple, spices, and white flowers. The taste is lively, with full correspondence between nose and mouth, savory and fresh, with a suave and persistent body. Excellent to enjoy with company, it lends itself well as an aperitif with raw ham, marinated raw fish, hummus, soft cheeses, but also with first courses based on white meats, fish, or shellfish. According to tradition, it is perfect with "risotto coi sparesi." The alcohol content is 13.5% vol. and it is recommended to serve it in balloon glasses, at a temperature of 8-10°C.
