Region: Santa Barbara, Honduras Process: Washed Variety: Pacas Altitude: 1600-1700 masl We Taste: Papaya, Creamsicle, Orange Blossom Honey Arturo Paz is a third generation, 45-year-old coffee producer located in El Dorado, Santa Barbara, Honduras. His farm, Finca El Itacayo, spans 3 hectares, where he grows mostly pacas alongside some gesha. He helps manage the San Vicente exporting company with his cousin, Benjamin Paz, who is another exceptional and renowned producer. Arturo begins his washed process by depulping cherries each afternoon, then dry-fermenting the parchment for 16 hours. The coffee is washed four times with water before being dried for approximately 15 days on concrete patios, with continuous hand-sorting throughout to ensure an even drying. In 2007, he bought his first property, Finca La Colmena, planting it entirely with Red Catuai. By 2009, he was producing his first specialty microlots and since 2011, Arturo has participated in the Cup of Excellence competition, earning many notable placements over the years. In 2018, he acquired Finca El Itacayo where he planted a diverse mix of varieties. His first harvest from this farm came in 2021, and after three years, he is now producing consistent, high-quality here. Angel's coffee reminds us of some coffees from Guji with its ripe tropical fruits and florals. This year, we also got to taste a maracaturra from Angel, roasted by Tim Wendelboe, and were blown away by the quality of each coffee side by side.
