Rhubarb grows best in cooler Australian climates where it can enjoy a winter rest and strong spring growth. Plant the crown into fertile, well-drained soil with plenty of compost, give it steady moisture through active growth, and allow the plant time to build a strong root system before taking heavy harvests. Only the stalks are eaten. The leaves are not edible and should be removed and discarded after harvest. In warmer areas, morning sun with afternoon protection is preferred. Choose deep, fertile soil that drains well. Mix through compost or well-rotted manure before planting. Avoid waterlogged soil, as crowns can rot in wet conditions. Plant the crown with the growing buds near soil level. Water in well after planting, then keep the soil evenly moist during active growth. Mulch around the plant to help retain soil moisture, but keep mulch away from the crown itself. Climate Suitability Cool and Alpine: Best suited. Plant in winter to early spring while dormant. Temperate: Suitable where summers are not too hot. Give good soil moisture and some afternoon protection in warmer districts. Subtropical: Possible only with care.
