How to use Wagyu beef dripping Searing Wagyu steak: Add a spoonful to a very hot pan before cooking. Wagyu dripping amplifies the beef's natural character, particularly effective with fillet, which renders less of its own fat during cooking. The best roast potatoes: Heat 1–2cm of Wagyu dripping in a heavy-bottomed pan over medium-high heat. Par-cook your potatoes, rough up the edges, and roast until deeply golden and crisp. Finish with fleur de sel. No other cooking fat comes close.
