Because Andean weather brings unpredictable mountain rains, drying coffee evenly can be a race against the clock. To protect quality, farmers deliver their freshly harvested lots directly to Jesús Volveras, a trusted local collector and farmer based in town. With dedicated facilities to dry cherries received at varying moisture levels (from 20% to 50%), Jesús ensures the coffee cures safely and evenly. From there, the lots head to Racafe’s dry mill in Popayán for rigorous cupping, grading, and quality control.
