Whole-bunch fermentation gives the wine its lifted aromatics and silky texture, while partial destemming mid-ferment keeps the fruit open and approachable. The result is a Gamay that’s bright and expressive up front, but with a bit of depth and savoury complexity underneath; a classic “drink now but think about it if you want to” style.
