For this Red Plum coffee, ripe cherries undergo anaerobic fermentation for 48 hours before being depulped. A second fermentation with a culture medium containing microorganisms from coffee cherry skins and mucilage enhances the cup's red fruit notes. The coffee is washed using a thermal shock technique, starting with hot water to open the pores before rinsing with cold water, sealing in the flavor components. Finally, the coffee is dried in a custom dehumidifier designed by the farm to remove moisture without applying heat, preserving aromatic compounds that contribute to the flavor profile. El Paraiso Red Plum is a fruity coffee with notes of plum, tart raspberry, and a strawberries-and-cream mouthfeel, creating a juicy flavor explosion perfect for espresso or pour-over brewing.
