Their family has crafted tea since the Edo period, cultivating fields along the Uji River using time-honoured Uji methods — under-cover growing and natural-style farming. Harvested only once a year in spring, each leaf is carefully picked, steamed, dried, shaped, and ground slowly on a stone mill. The result is a vibrantly green matcha with a deep, rich aroma and a smooth, calming umami unique to Uji’s native varieties.
